Scrumptious Crustless Quiche

A quiche is the perfect dish for any occasion – brunch, lunch, tea, dinner… the list goes on! They also have endless options for fillings, meaning you can make a completely different one each time. Also, quiches make a large meal out of relatively few ingredients.

Oh so delicious!

This recipe cuts out the pastry base; making it a much healthier meal that is wheat-free, gluten-free, sugar-free and grain-free. The best part is that you won’t even miss the base – the quiche still has nice crusty edges and you have more space for yummy fillings!

We made this last night for dinner and my husband said it was ‘one of the best quiches he has ever eaten.’ 🙂 It’s great for a light meal and is also ideal as a savoury option at a tea.

Ingredients:

Filling options:

Roasted butternut, caremelised onion, mushrooms and feta

Caremelised onion, rosemary and baby tomatoes

Smoked salmon strips, feta and cracked black pepper

Spinach and feta

Mushrooms, onion, red pepper and grated cheese

The option are endless!!

Quiche custard:

1/2 cup milk

6 extra-large eggs

1 tsp baking powder

salt and pepper to taste

finely grated parmesan to taste (optional)

Recipe:

Preheat oven to 180 C. Grease a pie/quiche dish or casserole dish.

Concoct a filling using the options above or create your own.

I went with the first option and I really recommend it. The roasted butternut gives an amazing sweet taste to the quiche! Here’s how to go about it:

Cut a butternut into small cubes or buy cubed butternut.

Cut up an onion roughly into ‘strips’

Place butternut and onion on a baking tray, drizzle with olive oil, sprinkle with rosemary and salt and pepper and roast for 30-40 mins at 180 C.

Ready to roast

When you have 10 minutes left for the butternut to roast, cook the mushrooms in a frying pan, adding a teaspoon of garlic and thyme leaves near the end of cooking.

Spoon the filling (roasted butternut, caremelised onions, mushrooms and cubed feta) into the dish.

Beat together the quiche custard ingredients and pour over the filling.

Bake for 45 minutes until the custard has set.

Ready to eat!

Serve for tea, or at a meal with a fresh side salad.
