Who would have thought that a rich and decadent dessert could be so good for you? This chocolate mousse is exactly that – filled with good-for-you ingredients that make something magical.

It may seem a little strange to include avocado, but you don’t taste it at all – it just provides rich creaminess!

Naturally sugar free, the bananas provide sweetness, so this tastes almost like a dark chocolate mousse. I thought it was sweet enough, but if you want it to be sweeter you can add a little honey or agave nectar.

Enjoy this dairy-free, vegan, gluten-free, grain-free and sugar-free dessert on any special occasion, or just for everyday indulgence!

Ingredients:

4 ripe bananas

2 ripe avocados

4 tbsp nut butter (almond or hazelnut)

4 tbsp raw cacao powder

1 tbsp raw cacao nibs

Place all the ingredients in a blender or food processor and mix until you get a smooth mousse texture.

Lazy Lemon Tart

This delicious, unusual and beautiful tart is the easiest thing to make – ideal for those looking for a quick dessert!

It is also grain-free, sugar-free and gluten-free, and is great for those on low-carb diets.

This is a great option for those who celebrate Pesach/Passover, as it has no grains or raising agents.

Enjoy the tart yet sweet taste of this refreshing dessert, and pair it with ice cream and  berries for the perfect combination!

Ingredients:

1 large lemon

1 and 1/2 cups Canderel Yellow or xylitol

1 stick butter (about 113 grams)

1 tsp vanilla essence

4 eggs

Instructions:

Spray a pie dish with cooking spray and preheat oven to 175 C.

Cut the lemon into 8 pieces.

Place lemon (with skins still on!) in a food processor along with all the other ingredients and mix until combined.

Pour mixture into pie dish and bake for 40 minutes or until set.

This recipe is exactly that both in product and method, creating rich chocolate and peanut fudge in the easiest way possible.

With just a few ingredients and a microwave, these sweet and salty squares are ready to be served.

I made these for my Gran’s 80th birthday tea (Happy Birthday Gran!) and they were snapped up by her guests.

Makes about 24 squares

Ingredients:

500g xylitol

50g cocoa powder

50ml milk

50g cold butter, chopped

1 large handful roasted and salted peanuts

Method:

Put xylitol and cocoa powder into a large microwave-safe bowl; whisk to combine.

Add the milk and butter and cook on full power in the microwave for 2 minutes.

Meanwhile, line a small tin or serving dish with baking paper.

Whisk the hot mixture until smooth (it will thicken as you do so), then stir in the nuts.

Empty into the lined tin, level the surface and chill in fridge for 20 minutes until solid. If not hard by then, chill in freezer for 5 – 10 minutes.

For everyone looking for grain-free bread, I hope you enjoy this new recipe! It is so easy to make, and is delicious hot out of the oven, or as an accompaniment to any meal. Yum!

Ingredients:

2 ¾ cups blanched almond flour, sifted
¼ teaspoon celtic sea salt
1 ½ teaspoons baking soda
½ cup raisins (optional)
2 eggs
2 tablespoons agave nectar or honey
2 tablespoons apple cider vinegar
pinch of caraway seeds / poppy seeds / sesame seeds

Instructions:

 In a large bowl combine almond flour, salt, baking soda and raisins

In a smaller bowl combine eggs, agave and apple cider vinegar

Place dough on parchment paper or a silicone baking sheet  on a baking tray and shape it  into a large, flat circle that is 8 inches across and 1 ½ inches tall

Using a serrated knife, score top of dough a half an inch deep in shape of a cross

Sprinkle top of bread with seeds

Bake at 180°C for 20 minutes, then turn off oven and leave bread in for 10 more minutes

Cool bread and serve!

Ingredients:

1 egg

1 cup milk

3 T xylitol

1 t vanilla extract

Cinnamon and xylitol mix to sprinkle on top (optional)

Simple and healthy ingredients

Instructions:

Preheat oven to 180 C.

Lightly beat the egg in a bowl. Add and combine the milk, xylitol and vanilla.

Place two ramekins or small cups into a medium-sized casserole dish or baking tray. Pour the mixture evenly into the two small dishes and then carefully pour an inch of hot water into the casserole dish/baking tray. Be careful not to splash any water into the desserts!

Allow to cool, then sprinkle cinnamon and xylitol on top and serve.

Scrumptious Crustless Quiche

A quiche is the perfect dish for any occasion – brunch, lunch, tea, dinner… the list goes on! They also have endless options for fillings, meaning you can make a completely different one each time. Also, quiches make a large meal out of relatively few ingredients.

Oh so delicious!

This recipe cuts out the pastry base; making it a much healthier meal that is wheat-free, gluten-free, sugar-free and grain-free. The best part is that you won’t even miss the base – the quiche still has nice crusty edges and you have more space for yummy fillings!

We made this last night for dinner and my husband said it was ‘one of the best quiches he has ever eaten.’ 🙂 It’s great for a light meal and is also ideal as a savoury option at a tea.

Ingredients:

Filling options:

Roasted butternut, caremelised onion, mushrooms and feta

Caremelised onion, rosemary and baby tomatoes

Smoked salmon strips, feta and cracked black pepper

Spinach and feta

Mushrooms, onion, red pepper and grated cheese

The option are endless!!

Quiche custard:

1/2 cup milk

6 extra-large eggs

1 tsp baking powder

salt and pepper to taste

finely grated parmesan to taste (optional)

Recipe:

Preheat oven to 180 C. Grease a pie/quiche dish or casserole dish.

Concoct a filling using the options above or create your own.

I went with the first option and I really recommend it. The roasted butternut gives an amazing sweet taste to the quiche! Here’s how to go about it:

Cut a butternut into small cubes or buy cubed butternut.

Cut up an onion roughly into ‘strips’

Place butternut and onion on a baking tray, drizzle with olive oil, sprinkle with rosemary and salt and pepper and roast for 30-40 mins at 180 C.

Ready to roast

When you have 10 minutes left for the butternut to roast, cook the mushrooms in a frying pan, adding a teaspoon of garlic and thyme leaves near the end of cooking.

Spoon the filling (roasted butternut, caremelised onions, mushrooms and cubed feta) into the dish.

Fantastic fillings

Beat together the quiche custard ingredients and pour over the filling.

Bake for 45 minutes until the custard has set.

Ready to eat!

Serve for tea, or at a meal with a fresh side salad.

Flourless Chocolate Cake

Everyone deserves something decadent now and then, and this recipe brings you just that – guilt free!

Delicious decadence

What could be more indulgent than chocolate cake? And this one is as rich, moist and delicious as any other. But best of all, it is flour-free! So many people try try to avoid flour for health reasons, so it’s great to not even have to use flour alternatives. This is also a very easy recipe – perfect to make with kids or whip up in an afternoon.

Make this for someone special, as  birthday cake, dessert, something for tea or just for yourself! As we approach the end of the year, we all deserve to celebrate – so indulge a little!

Makes one 30cm cake

Ingredients:

300g chocolate (I used Canderel dark chocolate)

100g butter

1 teaspoon vanilla extract

6 eggs

150g xylitol / 15g Canderel (Canderel is lighter so you need less)

50g cocoa powder

pinch of salt

extra cocoa powder, to serve

creme fraiche, to serve

Instructions:

Pre-heat oven to 180 C.

Grease a 27cm springform cake pan.

Melt together the chocolate and butter. Add the vanilla and stir.

Beat the eggs and the Xylitol/Canderel until thick and pale (about 5 mins).

Make sure you beat your eggs till they are really thick and fluffy!

Add the chocolate mixture to the egg mixture and sift in the cocoa powder and pinch of salt.

The chocolate sinks right to the bottom of the bowl. The eggs are so light, so fold gently!

Gently fold everything together.

Pour the mixture into the prepared cake pan and place in the oven.

Bake for 25 minutes until cake has risen and feels slightly firm. If you would like it to be very moist, only bake it for 17 – 20 mins.

Remove from oven and allow to cool completely in the tin.

Just out the oven

Remove from the tin and serve with a dusting of cocoa powder and a dollop of creme fraiche.
